STEP 1

Begin by whisk or sifting together the dry ingredients.  Flour, baking powder, baking soda, and salt.  If you want extra chewy cookies, add a full 1 tsp baking powder.

STEP 2

In a separate bowl, cream together the butter and sugars.  When light and fluffy, then add an egg, lemon juice, lemon zest, and vanilla extract.  Beat until combined.

STEP 3

Combine the wet and dry ingredients until just combined.  Cover and refrigerate for at least 30-minutes.  When ready to bake, cook at 350F for 8 to 10 minutes.
